She starts by uncovering how a business really runs: menu mix, labor models, supply chain, equipment. She looks at what’s selling, what’s slowing things down, and what’s missing.
From there, her team builds intentional menus that match the brand and perform in the kitchen day after day. She pushes back when something doesn’t add up. Armed with decades of experience and countless case studies, Erica knows how to earn buy-in.
Some days she’s deep in the data. Other days, she’s dialing in flavor, texture, and presentation. She’s immersed from start to finish.
